What is a queijaria?

Maybe you came here wondering what the word queijaria means, although the scientific term says “place where cheeses are made”, when we refer to the queijaria, we're talking about a cheese production company, an industry dedicated to manufacturing this product so consumed and used in all your meals and preparations.

Origin of cheese

Defined by the food industry as a fresh or matured product, which can be solid or seissolid and is achieved from the separation of whey and the coagulation of natural milk, integral, low-fat or skimmed.

Cheese comes from milk, either cow, sheep, buffalo or goat. The latter has become more widespread and known in recent years.

To understand the origin of cheese, we're going to be in very remote times, where those milking the cows carelessly dropped an acidic fruit into milk milked on the spot.

After some time, they observed that there was a division in the milk, discing the whey from the cream and forming a soft and gummy paste that had a good taste.

This division that happened by chance is what we know today as curd. On that occasion, what was created was the first artisancheese in human history.

Cheese Properties

It is a high protein value food rich in calcium, phosphorus, riboflavin and vitamin A. It is an excellent food that contains the same properties as milk, except lactose that is transported by whey during its preparation.

Inside the dairy group, cheese is what provides the most protein to the body. These proteins, because they are derived from milk, have a high biological value.

Vitamin A is present in fatty and semi-fatty cheeses in smaller amounts. Indeed, consuming cheese ensures a healthy physical condition, as long as it is consumed sparingly, since its lipid value (Fats) it's high.

Soft cheeses contain 22% protein. The hard ones 25%, the fresh ones between 10 or 12% and the melted ones between 12 and 18%. Cheeses have a high calcium and phosphorus content, especially hard cheeses.

In addition, cheese also plays a social role in some way, since it's the perfect excuse to promote a meeting between friends, around a good cheese board, a good homemade bread and a good glass of wine.

Cheese manufacturing process

The process, generally speaking and without going into technical details, consists of the separation of whey after coagulation of milk by the action of the cocumor or the use of other appropriate coagulants.

Curd is fermented by artificial means or by the addition of yeasts. Special machines are used where, through a mechanical system, milk is moved continuously until the whey is separated from the curd.

When handmade, man uses an element to collect the curd. This tool consists of a long stick from which, ultimately, it's a kind of grid with multiple strings.

This curd is then deposited in Molds that will give the final shape to the cheese. These molds are coated with a, the disspeaker, that will cover the curd and that it will be pressed for several days until the desired point of maturity is reached.
